Crayfish Tortillas

Ingredients

  • 4 x cooked crayfish tails
  • Grated zest of 1 lime
  • 1/2 tsp paprika
  • 1 x red onion diced
  • 2 tbsp chopped  fresh coriander
  • 4 tbsp mayonnaise
  • 200g spinach leaves, washed
  •  10 x soft tortillas
  • 2x tbsp Hoot Sauce
  • 1 x lemon


Method

Mix mayonnaise with Hoot sauce , and zest of lime with coriander.

Remove Crayfish meat from tails and dice before adding to mayonnaise mixture.

Place spinach leaves onto the wrap and place 2 table spoons of crayfish mixture .

Garnish with lemon wedge and paprika.
